Why does Rakı turn white?

The so-called louche effect occurs when the essential oils in the alcohol are mixed with water.
Anise seeds are added to the suma of the rakı, releasing their essential oils. These oils dissolve in the alcohol but not in the water, and this is why the characteristic milky discolouration of the rakı occurs when water is added. The same effect can also be achieved by strongly cooling the rakı.
